The tender, milk-fed veal loin chops you’ll find at our butcher counter are an exquisite ingredient on their own. But when you give them a quick marinade, grill them, and top them with a dreamy horseradish-herb butter, the results are pure magic. Savory. Juicy. Rich. And ready to impress on your table.


Ingredients

For the Horseradish-Herb Butter:

  • 1.5 cups soft fresh herbs (parsley, tarragon, chives, basil, or your favorite herbs)
  • 1 oz. finely grated fresh horseradish
  • 6 oz. unsalted butter, softened
  • 1 Tbsp. red wine vinegar
  • Zest of one lemon, plus 1 tsp. lemon juice
  • Salt and pepper, to taste

For the Veal:

  • 3 Tbsp. extra-virgin olive oil
  • 1 Tbsp. Dijon mustard
  • 2 garlic cloves, chopped
  • 1 tsp. ground caraway seeds
  • 2 tsp. smoked paprika
  • 1 Tbsp. fresh thyme leaves, stems removed
  • 4 veal loin chops
  • Salt and pepper, to taste

Instructions

  1. Preheat the grill on high heat.
  2. Prepare the Horseradish-Herb butter: Place all the ingredients in the base of a food processor or blender. Add salt and pepper. Purée until smooth and bright green. Place in a small bowl and prepare the veal chops.
  3. Prepare the Veal Chops: In a medium-sized mixing bowl, place the extra-virgin olive oil, Dijon, garlic, ground caraway seeds, paprika, and thyme. Mix until smooth. Coat the veal chops with this mixture, move to a sheet-pan or casserole dish, and set aside to marinate for about an hour.
  4. When ready to serve, season both sides of the veal chops with salt and pepper and grill them for about 5-6 minutes on each side, or until desired doneness.
  5. Just before serving, top each chop with a healthy spoonful of the horseradish-herb butter.
